We survived the first day!
Here's what I consumed all day:
2 servings raw almonds
3 celery sticks
1 granny smith apple
1 amazing dinner (more about this below)
miscellaneous nuts and raisins while shopping
a few grapes
1/2 bag edamame
lots of water
lemonade (water, lemon juice, and evaporated cane juice)
What I really want to show you is the "amazing dinner," though. Check this out:
The rules are that we can't eat anything cooked, but we allow rice, boiled potatoes, and some boiled veggies (if they're frozen, like the edamame was).
For dinner last night I made brown Basmati rice with avocado and tomatoes. The avocado and tomatoes were seasoned with curry powder, black pepper, salt, lime juice, and a wee bit of olive oil. I served a salad of spinach, green pepper, and onion. We added raisins after the photo was taken. The dressing was made of lemon juice with a little lime juice, another tiny bit of olive oil, evaporated cane juice (that's just sugar, but not the refined white variety), and crushed red pepper.
The avocado played a very interesting role in the dish. As the whole thing tasted sort of Indian (thanks to the curry powder), the avocado sort of seemed like cheese. That part of the dish was cold, but it was a nice contrast to the steaming rice and blended very well.
This dinner was so delicious, we'll definitely have it again even when we're not limited to eating raw foods.
