I made these vegan blondies from Hannah Kaminsky's book (buy it) last night. If you're coming to my house this evening, you happen to be a very lucky person.
I don't think I would ever make brownies from scratch; they just seem like so much work. But these, these babies were a cinch! It's really a matter of making the white part, taking some out and turning it into chocolate part, then putting it all in a pan and cooking it.
I'm not sure when I'll stop being completely in love with this cookbook or shocked at how easy it is to make delicious food without dairy, but I bet it won't be soon.
