For dinner last night I made Garlic, Lime, & Ginger Chickpeas. They aren't the most photogenic little morsels, but they're ridiculously tasty!
It's a cold dish, so it sort of resembles a pasta salad, but it's a lot more dense and filling than that. I got the recipe from Anne's Food, a fabulous food blog I have in my Google Reader. I only made one substitution: instead of three tablespoons of olive oil I used one tablespoon of olive oil and one tablespoon of water.
I've also made her guacamole and her peanut sauce, and everything has been wonderful!
